First, it would be helpful if the recipe would say how many cups of diced zucchini to use, instead of “use two zucchini.” Because in this case, I would not use two of these! Second, the recipe did not say to peel the zucchini. So I didn’t. I sliced and quartered as directed. I cooked the pot as directed, however, the peel of the zucchini did not cook and was hard.     I made it with nutritional yeast & it was as good as you’d think! Give it a try! I mixed the nutritional yeast in with the breadcrumbs.
